From a Tiny Hot Dog Stand to a Durham Institution
Moore opened the original Saltbox in October 2012, transforming a tiny former hot dog stand on North Mangum Street into a 205-square-foot seafood shack inspired by the hawker stalls and street food he had encountered around the world. Word spread quickly, and a food truck followed in 2014. In 2017, Moore opened a larger, more comfortable brick-and-mortar location on Durham-Chapel Hill Boulevard, giving the growing crowds room to sit down. When the original Mangum Street lease came to an end in 2021, that boulevard location became the flagship and remains the heart of Saltbox today, complete with indoor and outdoor seating and the same coastal soul that started it all.

Ricky Moore is not your average shack cook. A graduate of the Culinary Institute of America and a former military cook, he brings serious technique to deliberately humble food. In 2022, the James Beard Foundation recognized his talent, naming him the winner of the Best Chef: Southeast award, one of the highest honors in American cooking. He is also the author of the acclaimed Saltbox Seafood Joint Cookbook, published by UNC Press, which shares dozens of his recipes and the story behind them.
