About

Saltbox Seafood Joint: Chef Ricky Moore’s Coastal Seafood Shack in Durham

Few restaurants capture the spirit of the North Carolina coast quite like Saltbox Seafood Joint. Tucked into a friendly, unfussy space on Durham-Chapel Hill Boulevard, this counter-service shack has built a devoted following by doing one thing exceptionally well: serving impeccably fresh seafood, simply prepared, the way it is done in the fishing towns of the state’s tidewater. It is the kind of place where the menu is written on a chalkboard, the catch changes with the day, and the line out the door is a testament to just how good the food is.

A Taste of the North Carolina Coast

Saltbox is built around a straightforward philosophy: source seafood at its freshest and let it shine. Chef and owner Ricky Moore, a North Carolina native who grew up on the coast in New Bern, draws directly on the traditions of the state’s fishing communities. Fish and shellfish arrive fresh and are prepared to order, either lightly fried to a golden crisp or spice-griddled with a savory house blend. You can have your catch as a plate, rounded out with slaw, seasoned potatoes, peppers, and onions, or tucked into a buttered, toasted roll with a squeeze of lemon. It is honest, satisfying food that tastes like the shoreline it comes from.

From a Tiny Hot Dog Stand to a Durham Institution

Moore opened the original Saltbox in October 2012, transforming a tiny former hot dog stand on North Mangum Street into a 205-square-foot seafood shack inspired by the hawker stalls and street food he had encountered around the world. Word spread quickly, and a food truck followed in 2014. In 2017, Moore opened a larger, more comfortable brick-and-mortar location on Durham-Chapel Hill Boulevard, giving the growing crowds room to sit down. When the original Mangum Street lease came to an end in 2021, that boulevard location became the flagship and remains the heart of Saltbox today, complete with indoor and outdoor seating and the same coastal soul that started it all.

The James Beard–Winning Chef Behind the Counter

Ricky Moore is not your average shack cook. A graduate of the Culinary Institute of America and a former military cook, he brings serious technique to deliberately humble food. In 2022, the James Beard Foundation recognized his talent, naming him the winner of the Best Chef: Southeast award, one of the highest honors in American cooking. He is also the author of the acclaimed Saltbox Seafood Joint Cookbook, published by UNC Press, which shares dozens of his recipes and the story behind them. Yet for all the accolades, Moore keeps Saltbox refreshingly down to earth, an independent, chef-driven joint where the focus stays squarely on the fish.

What to Order

Because Saltbox works with the daily catch, the offerings rotate with what is fresh and available, so the chalkboard is always worth a careful read. The plates and rolls are the backbone of the menu, showcasing whatever fish or shellfish came in that morning. Do not miss the Hush-Honeys, the signature honey-glazed cornmeal fritters that put a sweet spin on the Southern hushpuppy, or the fried Brussels sprouts and seasoned potatoes on the side. To drink, there is house-made Good Tea, a bright Lemon Crush Punch, and local beer and cider. And when it comes to dessert, Ms Norma’s Lemon Pie is the perfect tart, creamy finish to a seafood feast.
